Whenever I am asked what my favorite food is, the answer is always the same: toast. This response almost always generates confused looks because I’m sure the image of toast for most people is a slice of wonder bread thrown into the toaster with a dollop of butter. Maybe cinnamon and sugar if their feeling fancy.
I totally get that. Growing up, bread with any type of “bird food” (oats and seeds) in it made me want to gag. Now I gravitate towards the whole grain, seedy varieties. As a child, toast toppings were also limited to peanut butter, butter, or jam. Thank god for the avocado toast trend and the thousands of types of nutbutter that are now available in grocery stores. Toast is not just a boring breakfast food anymore, but a vehicle for all of your creative combinations.
The best part about having toast for a meal is its versatility. I would eat a different kind of toast for every single meal for the rest of my life and probably never get sick of it because there are just so many delicious spreads, breads, fruits and vegetables out there for spicing it up! And the stranger the better. If you’re not going all out with your toast, you’re not doing it right. Just do me a favor here, and try out one of these unique combinations in place of your buttered bread for your next meal and let me know what you think. Grilled Peach, Goat Cheese and Honey Toast
Instructions: Heat up a grill to medium high heat. Place peach halves face down and grill for about 3 minutes or until grill marks appear. Remove from grill and let cool while you toast your bread. Spread goat cheese on toast and place peaches on top. Drizzle honey and dive in!
Avocado, Sweet Potato and Pesto Toast
Instructions: Slice a sweet potato into thin rounds. Brush lightly with olive oil, and bake at 425 F for 25 minutes, flipping halfway through. Top a slice of toast with mash avocado, followed by the sweet potato rounds and a drizzle of your favorite pesto.
