It’s been a long day at school or work, and I know the first thing you are ready to do when you pull into the driveway is break out the pots and pans and whip up a five star dinner, right? Wrong.
The minute I step inside my house (more like drag my feet lazily through the door), the first thing that’s on my mind is chilling out on my couch with a snack or two and an iced coffee, not putting together a fancy dish. Let’s face it, we work our butts off all day at whatever we do, and we all deserve a break from being on our feet. However, we also deserve better than frozen pizza every week night for dinner. To cook or not to cook becomes the question. You are stuck between a rock and a hard place deciding on the dinner situation; on one side you could go all out in preparing a dish that you know you will love but end up with a kitchen that looks like the battleground of World War III, or you could resort to a crappy microwave lean cuisine that literally has three bites of food in it. What a dilemma.
I know that this hypothetical example is not so hypothetical in many households these days. We love to spread ourselves too thin, and commit to all of the impossible challenges all in one day, but only until the school/work day wraps up. Once the minute hand reaches 3 o’clock, it’s time to do absolutely nothing and sit on the couch for the rest of the night watching season five of New Girl. Or at least that’s how it goes for me.
Because I know I am not alone in this not wanting to make dinner phase, I created a no-recipe recipe. This dish is the type of meal that you can pull out of your back pocket when you have a day where you literally cannot. These days are commonly known as Mondays, as I’m sure you know.
And I assure you that anyone can make this dish, even if you have the most Mondayish Monday ever. All you have to do is…
Throw pasta in water and cook until al dente.
Add tomato sauce and chicken sausage.
Put everything in a bowl, and resume your New Girl episode.
- 1 box whole wheat fettuccine noodles
- 4-5 precooked Italian chicken sausages
- 1 zucchini, spiralized
- olive oil
- marinara sauce
- Bring a large pot of water to a boil.
- Once water is boiling, add in pasta and cook according to the package directions.
- While the pasta is cooking, add spiralized zucchini and chopped chicken sausages into a large skillet with some olive oil and cook on medium heat until warmed.
- Drain pasta and mix with zucchini and sausage.
- Add in marinara sauce and serve immediately.
