I’ve got news for you all today. Exciting, foodie news that I cannot keep to myself any longer.
Nicole Culver, the talented entrepreneur and creator of Blissful Eats, is hosting a virtual Food Entrepreneur Summit. I cannot contain my excitement for this event. For me, this summit is equivalent to front row seats at a music concert. Call me crazy, but I would rather spend my Friday nights engaged in my BlogLovin’ feed, reading posts from my favorite bloggers than ball my heart out at a One Direction concert. (Are they even a thing anymore? I’m wayyyyyy out of the popular music scene.)
To celebrate the advent of Nicole’s summit, I’ve created a satisfying, dessert-like breakfast using her Maple Crunch Paleo Granola. Not only is Nicole putting on an amazing virtual experience for foodies and bloggers alike, but she also makes some mean granola. We’re talking clusters-in-every-handful, finish-the-whole-bag-in-one-sitting delicious granola.
I did manage to contain myself from eating it all though for at least an hour while making this breakfast. As soon as I dug into this parfait, I knew that it was well worth the short period of longing and torture of waiting to photograph this baby before inhaling the entire jar in 2 seconds.
This parfait is not the same without Blissful Eat’s maple granola, and I highly suggest you head on over to Nicole’s cite to order a few bags. - 1 baked sweet potato, flesh removed and mashed*
- 1 cup greek yogurt
- 1-2 tsp pure maple syrup
- ½ cup fresh blackberries
- ¼ cup Blissful Bites Paleo Maple Crunch granola
- Mix together maple syrup and yogurt.
- In a large, wide mouth mason jar, add half of the mashed sweet potato.
- On top of the sweet potato, add half of the yogurt mixture, followed by a layer of blackberries, and finally a layer of granola. Repeat the layers with the remaining half of the ingredients.
- Eat immediately and enjoy!
