Life is so incredibly wonderful right now. Up until this past week, I felt like I was been walking in a daze to and from school, only half aware of what was going on right in front of me. I don’t know what prompted the sudden change; perhaps it was the start of football season or an action packed homecoming week, but I switched off auto-pilot and tuned into a whole new world full of happiness and gratitude.
Each day I have been waking up excited for the new day, something that is rare for me in the early hours of the morning when my alarm sounds. School has been something that I have looked forward to rather than dreaded. My mom has made some of the best dinners ever. This week started with 2, two-hour delay days due to fog. The weather has been beautiful with the sun shinning bright and the temperature reaching a pleasant 73 degrees. Life. Is. Good.
Just when I thought my happiness meter could not reach any further, these no-bake bites happened. I walked in the kitchen on a Tuesday afternoon with no expectations of creating a killer recipe, just boredom and a growling stomach. After throwing in a handful of this and a handful of that into my food processor, I came up with these salted caramel no-bake bites. I’m now fully convinced that my week of happiness was triggered by the delightfulness of these little energy bites. Maybe I’m a little biased, but when you give these a try for yourself, I think you’ll agree.
I don’t know what it is about the sweet and salty combo, but I just can’t get enough of it! The sprinkle of salt on these babies really brings out the caramel flavor of the dates, making this healthy snack taste like a decadent dessert. And bonus, they’re mini, which means you can eat about 10 and not feel incredibly full. Not that I would have any experience with that or anything.

- ½ cup rolled oats
- 1 cup pitted dates
- ¼ almond butter
- 1.5 scoops WakeShake Caramel Latté Protein Mix
- 1-2 tbsp almond milk
- splash of vanilla extract
- pinch of salt for topping
- Pulse all of the ingredients except almond milk in the food processor until a thick dough forms. Add in the almond milk one tablespoon at a time as necessary. (I only needed 1 tbsp)
- Once the mixture is cohesive, roll into balls and top with sea salt. Store in the fridge or refrigerator.
